Best Green Dinner for a Veggie Hater

Delicious broccoli side dish!

Two weeks into the new year and I’m going pretty strong with my eat more vegetables resolution. Two weeks ago we conquered a green breakfast: spinach smoothie (creamy and delicious!); and last week we took on a green lunch: arugula and green leaf salad (taste bud’s in heaven!). That means I’ve eaten three different – and amazingly healthy – types of greens in a short period of time. This week, it’s all about dinner…and it’s all about broccoli…

{Broccoli} is reputed to benefit digestion, the cardiovascular system and the immune system, and to have anti-inflammatory and even cancer-preventing properties.

Ingredients:
Broccoli
Garlic, 2-3 cloves
2 tbsp. olive oil
pinch of salt
pinch of pepper

Mix all the ingredients in a plastic bag while your oven preheats to 375 degrees. Spread on a cookie sheet and bake on the top rack for 30 minutes until your broccoli is crunchy. It will be delicious! Eat this as a side dish to a balanced meal of protein and grain. Trust me, you will actually become a broccoli fan!
